4 cloves of garlic,

Clean chicken
Clean chicken with lime and cut up. The best size usually chunks 1-2 inches. If you have a butcher that cleans and cuts your chicken for your this is even easier and all you have to do is clean with lime!

Season and Marinade
Mince the garlic and dice the onions and tomatoes. Combine all the fresh seasoning with the meat and let marinade for 2-4 hours.

Get your dutchie out, hopefully for this you have a 8 quart one. Coat the bottom with oil And half a pack of beta pax curry if you are using it. Then place the chicken in there to brown turning once golden brown. Once all are browned pour in 2 cups of water.
Reduce the fire and simmer for 30 minutes until curry gravy is slightly thickened and water is minimal in pot.
Eat with white rice and plantain!
