Ingredients:
Peel and bruk up pineapple
Break off the top of the pineapple (the green part) and discard. We will use all the rest. Peel the pineapple, removing any chunks that are too ripe and setting aside for juice.
Boil Pineapple and ginger
Boil the pieces in 2 cups of water for 15-30 minutes. Turn off stove, let cool and steep 2 hours. Overnight is best, in the bottom of the fridge.
Blend the mixture until fine. If you have a powerful blender this shouldn’t take more than 5 minutes. on low power blenders blend for at least (2) 5-minute intervals to make sure you are getting the most juice out.
Strain and Sweeten
Strain the blended mixture through a strainer at least two times. Then sweeten with 1/2 cup of brown sugar. This yields around 1 quart of juice.
Serve
You can enjoy this cold, after sitting in the fridge fih a’likkle while—it sweet!!
